This course provides an in-depth study of manoucheh, Lebanon’s iconic flatbread, examining its cultural significance, historical roots, and evolving role in contemporary gastronomy. Students will gain practical expertise in dough preparation, fermentation, shaping, and baking, while exploring traditional toppings such as za’atar, cheese, and keshek. Instruction emphasizes both artisanal methods and modern adaptations, with attention to ingredient sourcing, flavor balance, and presentation.
Upon completion, participants will demonstrate proficiency in preparing authentic manoucheh, articulate its cultural significance, and critically evaluate modern reinterpretations within global bread and pastry arts.
